Previously, only my husband cooked chicken according to this recipe for the New Year and his mother's birthday. But it is very tasty, I didn't want to wait for the holidays, and I decided to cook it too. My husband was taught to cook by the Chinese who lived with him in the same dormitory during his student days.

Cut the chicken in portions, pour over soy sauce and let stand for several hours (sometimes it is marinated all day or night, sometimes I pour soy sauce directly into the pan and not marinate the chicken). In a deep frying pan with a thick bottom (in a cauldron it is also possible) pour vegetable oil in a layer of about 1 cm. Add sugar and stir until the sugar turns golden brown. Put the chicken in the pan and fry for 5-7 minutes. Boil water, pour boiling water over the chicken so that it is completely covered with water. Simmer over medium heat until the water is completely boiled away. The husband, when cooking, does not cover with a lid and evaporates the water over maximum heat. It seems to me that when cooking at maximum heat, the chicken turns out to be harsh. So I cook over medium heat and cover first. When there is less than half of the water left, I remove the lid and add more soy sauce in the middle of cooking. Ready! Bon Appetit!
