Cake "Black Forest" - chocolate cake with cherries and whipped cream, based on the German Black Forest cake. Sweet tooth dream.

  1. First we need to make a biscuit. Carefully separate the egg whites from the yolks (make sure that not a drop of yolks gets into the whites - they will not beat).
  2. Add a pinch of salt to the proteins. Beat egg whites with a mixer at low speed. When bubbles appear, the mixer speed can be increased.
  3. Add sugar to the proteins in a tablespoon and beat for two minutes after each. Sugar should be completely dissolved, and the protein mass should be smooth, dense.
  4. Add egg yolks to egg whites and beat for 2 minutes.
  5. Then pour in the melted, chilled butter (from the edge, along the wall of the bowl) and whisk again.
  6. The final stage: add the sifted flour and cocoa, mix - with a mixer at low speed (no more than 15 seconds!) Or carefully with a spoon, from the bottom up so that the mass does not settle.
  7. Preheat the oven to 180 degrees. We cover the form with parchment paper, grease it with oil.
  8. Pour the dough into the prepared form. We put in the oven for 40 minutes. It is very important to remember: you cannot open the oven for the first 15 minutes (or better during the entire baking time) - this is fatal for a biscuit!
  9. We take out the finished biscuit from the oven, cool, remove the parchment from it and leave it overnight.
  10. For the filling, we clean the cherries from the stones or defrost them (depending on the season). In any case, there will be juice left, and we need it. Pour the cherry juice into a measuring container, see how much it turned out.
  11. Exactly the same amount we must add sugar. Mix juice with sugar.
  12. We put a saucepan with juice on the fire - we cook cherry syrup. When it boils, add cherries. Bring to a boil, boil for two minutes and turn off.
  13. Whip the chilled cream with powdered sugar.
  14. We cut the biscuit into three cakes of the same thickness. We collect the cake.
  15. Finely rub the chocolate. We mix a small part of the whipped cream with chocolate chips (or cocoa).
  16. We lay out the first cake. Pour it with cherry syrup (soak). We try to do it evenly.
  17. Spread the cream and chocolate mixture in an even layer on the cake.
  18. Cover with a second layer. We also soak it with syrup and lay out the cherry.
  19. They have white whipped cream on them. Try to keep the thickness of the cream the same in the center and along the edges.
  20. Cover with a third layer. With the remaining cream, coat the top and sides of the cake.
  21. We complete the decoration. Finely grate the chocolate (it is good to cool it in advance to make it easier to grate).
  22. Sprinkle the cake generously with fine chocolate chips. If you pour it on top of the bowl, it will be distributed evenly, in a thin layer.
  23. Rub a small piece of chocolate with large chips. Sprinkle the top of the cake with chocolate chips.
  24. Gorgeous cake "Black Forest" is ready. We cut off a piece, put it on a plate, decorate the plate with a pattern of cherry syrup.
