  1. Separate the whites from the yolks.
  2. Beat the yolks with half the sugar and salt until white.
  3. Add pre-melted (in a steam bath) chocolate to the yolks, continuing to beat.
  4. Beat egg whites with remaining sugar.
  5. Beat until strong peaks.
  6. Separately sift the almond flour.
  7. Add cocoa powder.
  8. Carefully fold the egg whites into the yolk and chocolate mixture.
  9. Stir in cocoa powder and almond flour.
  10. Preheat the oven to 180 degrees. Line a springform pan with a diameter of 24 cm with parchment paper. Grease the sides with oil.
  11. Put the dough into a mold. Level the surface.
  12. Bake in the oven for 30 minutes at 180 degrees.
  13. Mix orange juice, corn starch, Cointreau liqueur. While stirring, bring the mixture to a boil.
  14. Cut the finished biscuit into three cakes.
  15. Lubricate the lower and middle cakes with an impregnation of orange juice and liqueur.
  16. Fold the cakes one on top of the other. Leave for 1 hour.
  17. Put the mascarpone into the mixing bowl. Add powdered sugar. Mix.
  18. Pour in the cream and beat thick cream.
  19. Apply the finished cream evenly on each cake.
  20. Spread the cream on the sides and top of the cake. Put the cake in the refrigerator for 3-4 hours.
  21. After that, decorate the cake with berries and mint leaves.
