This delicious chocolate cheesecake is super easy to make. Curd cheesecake is light and airy, with a hint of chocolate and coffee in taste!

  1. First of all, we prepare the base. To do this, grind the chocolate chip cookies in a blender bowl into crumbs.
  2. Add melted butter.
  3. From the resulting crumbs we form the basis for the cheesecake (bottom and sides). It is very convenient to do this with a glass.
  4. For baking, it is best to use a detachable round form. For the amount of ingredients indicated in the recipe, a form with a diameter of 20-22 cm is suitable. And do not forget to cover the bottom of the form with parchment.
  5. Now we are preparing the filling: we send eggs, vanillin, sugar, flour to the cottage cheese and beat it with a blender into a homogeneous, smooth mass so that there are no grains left in the cottage cheese.
  6. Set aside 1/3 of the curd mass in a separate bowl.
  7. We prepare chocolate and coffee topping: put the chocolate in a saucepan over a small fire, add cognac and instant cappuccino, stir with a spatula until all ingredients are completely dissolved. If you wish, you can not add cognac and / or instant coffee, but limit yourself to one chocolate. Don't forget to leave some chocolate to decorate the finished cheesecake.
  8. Add the prepared chocolate topping to 2/3 of the curd mass and mix thoroughly until it acquires a uniform chocolate color.
  9. We spread the chocolate curd mass on the base of the cheesecake, and carefully spread the remaining white curd mass on top (1/3 of the part that we set aside in a separate bowl).
  10. We send the cheesecake to the oven, preheated to 160 degrees, for 1 hour.
  11. After cooling completely, carefully remove the cheesecake from the mold, decorate with chocolate chips.
