This quick microwave-in-the-cup muffin recipe comes to my rescue when unexpected guests arrive. If you want to quickly enjoy sweets, prepare these mini-cupcakes, because you only need 10-15 minutes and products that are often on the shelf.

  1. From this amount of products, I got three cupcakes. I used 200 ml cups.
  2. Pour 100 ml of drinking water into the Turk, add ground coffee to it and put on fire. Wait until it boils and remove from heat. Repeat 2 more times, then cool the finished espresso. If you have a coffee machine, you can make espresso with it.
  3. Combine sugar and egg in a deep bowl, beat with a whisk until sugar dissolves.
  4. Pour in vegetable oil, mix the ingredients. Leave 1 teaspoon of oil to lubricate the cups.
  5. Add 40-50 ml of prepared espresso to the dough, mix.
  6. Add cocoa powder to the dough, mix with a whisk, breaking up lumps.
  7. Add salt, soda and sifted flour to the dough.
  8. Mix all ingredients with a whisk. The finished dough is liquid and glossy, flows down from the spatula in a thin stream.
  9. Grease the inside of the cups in which you will bake the cupcakes with vegetable oil using a silicone brush.
  10. Fill the cups with dough to a third of their volume.
  11. Bake the cupcakes one at a time in the microwave at 800W for 1.5-2 minutes. Cupcakes rise very well, so don't fill cups more than a third of the way.
  12. Due to the fact that the cups were oiled, the muffins are easy to get. But you can also serve them in cups - it’s even more interesting that way.
  13. These cupcakes made from coffee and cocoa help out when you want sweets here and now. It took less than 15 minutes from the start of preparation to the finished cupcakes!
  14. Very easy to prepare, soft, airy and delicate cake with a rich chocolate and coffee taste, which is prepared in a few minutes, is a wonderful dessert for children and adults.
