Chocolate hearts with creamy mousse

You can make this already beautiful dessert luxurious. Firstly, on the upper hearts you can write some kind of romantic wish or declaration of love. To do this, melt 50 g of white chocolate as described in step 1. Transfer it to a piping bag with a very thin attachment, write the cherished words and refrigerate. Secondly, hearts can be decorated with fresh or candied flowers. For candied flowers, it is best to use small roses or violets. Prepare a sugar solution from 1 tbsp. l. sugar and 1 protein. With a thin brush, apply the solution to the petals of 4 violets. Put the flowers on paper napkins, sprinkle with powdered sugar through a strainer and let dry.

  1. Break a bar of dark chocolate into small pieces, put in a metal bowl. Place in a pot of boiling water of suitable diameter. Cook until the chocolate is completely melted.
  2. Make a heart-shaped stencil with a width of about 10 cm from thick paper.Use it to draw 8 identical hearts on a sheet of parchment.
  3. With a small culinary brush, brush the hearts with melted chocolate. Leave it on for 10 minutes, then apply a second coat. Allow to harden, then carefully remove from the paper and place in the refrigerator.
  4. Chop the white chocolate with a knife or grate. Add instant coffee to the cream, stir, pour into a saucepan and bring to a boil. Add white chocolate, stir. Transfer to a bowl and let cool. Whisk until fluffy and transfer to a piping bag with a smooth nozzle.
  5. Squeeze the cream into small balls onto 6 hearts, as shown in the photo. Fold 3 hearts with cream one on top of the other. Cover with the remaining chocolate hearts and refrigerate until serving.
