Chocolate roll stuffed with soft cottage cheese and bananas is prepared without flour and sugar. Banana slices and honey add sweetness and appetizing aroma to the pastries. The basis for this roll is a biscuit cake, which is prepared not with flour, but with corn starch. For chocolate taste, cocoa powder is added to it, and baking powder is added to preserve splendor.   1. Separate the yolks from the whites. For the roll you will need four egg whites and two yolks.
  2. Turn on the oven and heat up to 180 degrees.
  3. Beat the egg whites with a mixer until firm peaks.
  4. One by one, without ceasing to beat the egg mass, we introduce the yolks into the whites.
  5. Beat egg whites and yolks for about 3 minutes until smooth.
  6. Combine starch, cocoa and baking powder.
  7. Mix them until smooth. For greater softness and airiness of the roll, the mixture can be further sieved.
  8. Add cocoa with starch and baking powder to beaten eggs.
  9. With gentle movements from the bottom up, mix everything with a wooden spatula. You need to mix gently, but try to make the dough homogeneous, without lumps.
  10. We cover the baking sheet with parchment. Grease the parchment well with butter. We spread the dough on parchment with a layer of about 1 cm and level it.
  11. Place the baking sheet in the preheated oven for 15 minutes.
  12. We take out the finished cake from the oven.
  13. While the cake is still hot, peel off the parchment.
  14. Place the cake inside up and let it cool completely.
  15. Peel the banana and cut into small pieces.
  16. We combine cottage cheese, banana and honey
  17. Mix the mass until smooth.
  18. We apply the curd-banana mass on the cake.
  19. We roll the cake into a roll carefully, as the cake is fragile and may crack a little.
  20. We put the finished chocolate roll with cottage cheese and bananas in the refrigerator for 1-2 hours, after which we serve it to the table. If desired, you can decorate the roll with coconut flakes or powdered sugar.
