Classic Cantonese Fried Rice with Chicken and Shrimps

  1. Rinse the rice, drain the water and dry slightly through a sieve. Boil the rice in a ratio slightly less than 2 to 1. Put in boiling water, cover and cook over low heat. until all the water is absorbed. It is highly advisable not to lift the lid during the cooking process.
  2. Leave the cooked rice to cool.
  3. Boil the chicken until tender. To cut in cubes.
  4. Chop the green onion finely. Heat the vegetable oil and fry the onion in it for 1 minute.
  5. Beat eggs lightly and, stirring constantly, fry in a pan until thick.
  6. Add rice, chicken and shrimp to the egg mass. Fry for 5-10 minutes, stirring occasionally.
  7. Add green peas, soy sauce, pepper and crushed chicken stock. Stir for another 5-10 minutes.
  8. Serve garnished with finely chopped green onions.
