Coconut muffins with chocolate

Fragrant cupcakes with coconut flakes and chocolate filling are the perfect treat for the sweet tooth. Cupcakes are prepared quite simply, quite quickly and are incredibly tasty. A great addition to your morning cup of tea or coffee!

  1. We prepare products according to the list.
  2. Any chocolate can be taken. I have white and milk.
  3. Butter is best taken out of the refrigerator in advance - it should be as soft as possible.
  4. Cupcakes are cooked very quickly, so it is better to turn on the oven in advance to warm up to a temperature of 200 degrees.
  5. In a deep bowl, combine eggs and sugar. Beat at high speed with a mixer until white, about 4-5 minutes.
  6. Add softened butter and milk. We mix.
  7. Pour in the shredded coconut. Mix again.
  8. In parts, mixing each time, add flour with baking powder.
  9. The muffin batter should be quite thick and fall off a spatula or spoon like a ribbon.
  10. Fill paper cupcake liners about a third full with batter.
  11. Break the chocolate into squares. Put a piece of chocolate directly on the dough in each mold.
  12. Spread about 1 tbsp for each piece of chocolate. a spoonful of dough.
  13. We send the molds to the oven, heated to a temperature of 200 degrees, for about 20 minutes.
  14. Remove the finished cupcakes from the oven and cool slightly.
  15. Cooking chocolate icing for cupcakes.
  16. To do this, break the chocolate into pieces and melt either in the microwave with short pulses of 10-15 seconds, or in a water bath - placing a bowl of chocolate on a saucepan with a small amount of boiling water.
  17. Spread melted chocolate over cooled muffins. I do this with a silicone brush.
  18. Sprinkle each cupcake with coconut.
  19. Fragrant muffins with coconut and chocolate are ready.
