Coconut rice with kaffir lime

  1. Rinse the rice thoroughly in cold water, season with salt, cover with coconut milk and add 2-3 leaves of kaffir lime. Tear the leaves first with your hands to give more flavor.
  2. Add cold water and put on medium heat. As soon as the water boils, reduce heat to low and cook, covered, for 8-10 minutes, until tender.
  3. Once the water is completely absorbed, remove the lime leaves and stir the rice thoroughly.
