When we need to prepare for a children's holiday, we often get lost: what to cook for children so that there is a lot, tasty and low-calorie? It is also important that making sweets does not force mom to spend the day (or even night) in the kitchen. I also had such problems until my mother-in-law suggested a recipe to me, which became a real salvation for me and is still on the list of the most reliable, balanced and quick recipes for literally all occasions. We are talking about wonderful cookies "Houndstooths"- a delicious and delicate treat, which I recommend to everyone who is not in the mood to "kill" themselves in front of the oven before the holidays in order to feed the guests at least something. So let's get started without wasting time. Unlike most quick baking, Goose Feet cookies have been known in our country for about two hundred years, when they were first baked in Altai, where cottage cheese has always played a significant role in culinary culture. Much has changed since then, but the recipe for delicate curd cookies has remained almost unchanged, so if you want to know what our ancestors had on the sweet table, please give my recipe a few minutes of attention

  1. Transfer the butter from the regular section of the refrigerator to the freezer.
  2. Pour flour into a sieve over a bowl and sift at least three times.
  3. Pour cottage cheese into a blender bowl and grind until pasty.
  4. Separate the yolks from the proteins, pour into a bowl and keep at room temperature .
  5. Did you know? To easily separate the whites from the yolks, pierce the egg shell with a sharp needle in one decisive motion, and then substitute the bowl: the whites will flow freely through the hole formed, and the yolks will remain in the shell.
  6. Dough
  7. Pour the cottage cheese with egg yolks, then mix the ingredients well with a spoon.
  8. After that, set the mass to beat at medium speed for about a minute.
  9. Without stopping whipping with a grater, rub ice cold butter into a bowl.
  10. After about 30 seconds, add boiled but chilled water to the mass.
  11. Important! At first, you might think the dough is too crumbly to make cookies, but this is just a sign that the dough is not mixed well. Do not stop actively kneading the mass and you will soon see for yourself that the consistency has become stronger, if not denser.
  12. Assembly
  13. We remove the mixer, add half of the sifted wheat flour, mix by hand.
  14. After that, add the second half of the flour to the mass, knead the crumbly dough.
  15. Continue kneading until the dough rolls into a ball easily.
  16. We wrap it with plastic wrap and put it in the refrigerator for half an hour or even an hour.
  17. Did you know? If you have any special preferences for the dusting of such cookies, at this stage you can fully realize yourself: the products are just waiting to be additionally decorated with a drop of food coloring or ground cinnamon, as well as ginger. You can also create a special sugar pattern on the surface of the cookie by spreading the powdered sugar with a teaspoon of lemon juice.
  18. Bakery products
  19. Prepare a baking sheet according to the standard: rinse with water, wipe lightly with towels.
  20. Then we line it with baking paper, cut off the edges or turn inward.
  21. Remove the noticeably hardened dough from the refrigerator, separate a piece from it.
  22. Roll out this piece of dough on a table, previously sprinkled with flour, until a thin layer is obtained.
  23. Using a glass, cup or other similar object, cut out even circles from the dough.
  24. Pour granulated sugar into a plate, mix it with powdered sugar.
  25. We take a round workpiece in our hands, dip it in sugar on one side.
  26. Then we fold it in half so that the sugar side is inside.
  27. Dip the resulting crescent moon again in sugar, also on one side.
  28. We fold the workpiece again, with the sugar surface inward.
  29. Now we have a triangle: dip it in sugar on either side.
  30. We put it on a prepared baking sheet so that the sugar is on top.
  31. We set the oven to warm up to 190-200 degrees .
  32. Place the prepared baking sheet with cookies on a high wire rack.
  33. We keep it in the oven for at least 15 minutes .
  34. Then, slightly opening the door, we visually assess the readiness of our products.
  35. We remove the finished products from the oven and let them cool down directly on the baking sheet.
