Recipe for homemade kefir cake, the dough for which is prepared on the basis of corn flour, with the addition of raisins and orange zest. Cornmeal cake turns out to be very tasty, has a ruddy crust, soft fragrant crumb and a beautiful sunny color. Corn cake is easy to make. It is equally good with both hot and cold drinks.

  1. Prepare all the necessary ingredients for making kefir corn cake with raisins and orange zest.
  2. Butter should be soft, so take it out of the fridge and leave it at room temperature beforehand.
  3. Turn on the oven to preheat to 180 degrees.
  4. In a bowl, combine soft butter and sugar.
  5. Beat the butter and sugar with a mixer at high speed for about a minute.
  6. Whisking constantly, add the eggs one at a time to the butter mixture.
  7. Pour baking soda into kefir, mix. Pour the kefir into the butter-egg mixture.
  8. Stir the mixture with a mixer on low speed for a few seconds.
  9. Then sift wheat and corn flour into the base of the dough.
  10. Stir. You should get a homogeneous dough.
  11. Add raisins and orange zest to the batter. (I have dried orange zest, which can be substituted for fresh. Lemon zest can be used instead of orange zest.)
  12. Stir the additives into the dough.
  13. Cover the bottom and sides of a rectangular shape with baking parchment. Pour the cake batter into the prepared pan.
  14. Bake the corn muffin in an oven preheated to 180 degrees for about 40 minutes, until golden brown. Check readiness with a wooden stick - it should come out of the cake dry.
  15. Remove the finished corn cake on kefir from the mold, cool. Sprinkle with powdered sugar or frosting if desired.
  16. Serve the cornbread cut into bite-sized pieces.
