A simple recipe for a delicious apple pie on curd dough in the oven. Fragrant and delicate homemade cakes for family tea. There are a lot of apples in this pie: juicy pieces will be in the dough and on top - as a decoration.

Wheat flour for dough is suitable for both premium and first grade. Take cottage cheese not dry, medium fat (I have 5%), and chicken eggs - large (55-60 grams each). Butter - at least 72% fat (spreads and margarine are excluded!). You can reduce the amount of sugar, but according to the recipe, the finished apple pie is not sugary at all. Ideal apples for these baked goods are dense and juicy, sweet and sour varieties.

  1. To prepare this simple and delicious apple pie, we need the following ingredients: apples, cottage cheese, wheat flour, granulated sugar, butter, baking powder, chicken eggs, vanilla sugar and a little salt. All foods should be at room temperature.
  2. We take a baking dish (you can not only round - I have a diameter of 24 centimeters, but also square or rectangular). To prevent the baked goods from sticking, you can cover the form with parchment paper or make a so-called "French shirt". Grease the mold with a thin layer of butter, then sprinkle with flour, shaking off the excess. Alternatively, you can simply grease with vegetable oil - then flour is not needed.In a deep bowl, combine 300 grams of wheat flour with two teaspoons of baking powder and a pinch of fine salt. I advise you to make the baking powder yourself according to this recipe (it turns out a lot and will last for a long time). Thoroughly mix the dry ingredients of the future cake and sift the mixture through a sieve - this way we will remove possible lumps.
  3. Now we are preparing the curd dough. In a bowl for beating (I have a bowl from a food processor) put 100 grams of soft butter and add 200 grams of granulated sugar. To keep the butter soft, remove it from the refrigerator beforehand and leave it on the table for a couple of hours.
  4. Grind butter and sugar for 5-7 minutes using a mixer, then add chicken eggs one at a time (3 pieces in total).
  5. Beat everything into a lush foam, then add 200 grams of cottage cheese. If the curd is not very tender, be sure to rub it through a sieve to get rid of the lumps.
  6. Stir the cottage cheese into the base and pour all the flour with baking powder and salt at once.
  7. Mix with a spatula or mixer (at the lowest speed). For 10-15 movements with a spatula, you will get a homogeneous, tender and airy dough. You do not need to mix for a very long time - as soon as all the flour is moistened, the dough is ready for baking.
  8. Now it's time to get to the apples. For the filling and decoration, we need three medium-sized pieces (net weight - about 400-450 grams). We wash the apples, cut them in half and carefully remove the seed pods. Cut half of the apples into small cubes, and the rest into thin slices.
  9. Add the apple cubes to the dough.
  10. Mix everything quickly so that the apples are evenly distributed throughout the dough.
  11. We transfer to the prepared form.
  12. Smooth out with a tablespoon or spatula.
  13. We put apple slices on top.
  14. Sprinkle with a teaspoon of vanilla sugar.
  15. We send the form with the workpiece to a preheated oven and bake at 170 degrees for about 45-50 minutes. I have a Hephaestus gas oven, bottom heating, no convection. You are guided by the characteristics of your oven. We check the readiness with a wooden skewer or a toothpick, which should come out of the dough completely dry. Just do not overdry the cake to keep it juicy and tender.
  16. Let the finished apple pie on curd dough cool, cut into portions and serve. Sprinkle with powdered sugar if desired. Cook for your health, friends, and bon appetit!
