The broth court is a quick broth that is used to prepare other dishes. Basically, eggs, vegetables, seafood, fish or tender sweet meat are poached in it. The court broth contains white wine, lemon juice and spices. Unlike traditional rich broths, it is cooked for a few minutes. You can prepare it ahead of time and store it in the fridge or freezer, or use it as a flavor base for your meals if needed.

Ingredients

Directions

  1. Combine all ingredients in a saucepan and bring to a boil over high heat. Reduce heat and simmer for 8 minutes. Strain the broth or use in chunks the first time, then strain through a fine sieve and refrigerate for up to 3 days, or freeze for up to 2 months. Either way, be sure to bring it to a boil before using.
