Cupcakes with cherries and chocolate are very elegant and tasty. For example, this delicious cupcake with white chocolate and cherries can be served at the festive table instead of a cake or pie.

  1. Preheat the oven to 180 degrees. Line a cake tin (approximately 1 kg) with parchment paper.
  2. In a large bowl, beat the icing sugar, vanilla sugar and butter until fluffy. Then add the eggs (one at a time), and gradually add the flour mixed with the baking powder. Knead the dough until smooth.
  3. Roll the cherries in a little flour. Combine half of the cherries and 90 g of white chocolate and add to the dough. Mix well.
  4. Pour the dough into the prepared pan and top with the remaining cherries and 90 g of chocolate, lightly press into the dough. Bake for about 1 hour, until ready (readiness to check with a toothpick or other wooden stick. Having pierced the cake with a stick, it should come out clean).
  5. Remove the cake from the oven, let stand at room temperature for about 5 minutes, then remove the product from the mold and leave on a wire rack to cool completely.
  6. Let the mascarpone stand at room temperature for about 15-20 minutes. Melt the remaining 100 g of chocolate in a water bath. Quickly add 1 tablespoon of mascarpone to the chocolate, mix well, then add the rest of the cheese and beat. Brush the cake with this creamy chocolate mixture. Decorate the white chocolate cupcake with chocolate shavings.
