We hasten to share a recipe for wonderful muffin cupcakes with cottage cheese and berries. We hope you enjoy it and will surprise your loved ones this weekend.

Ingredients

Directions

  1. Prepare the curd filling: mix the curd with sugar, lemon juice and lemon zest.
  2. We prepare a "wet" mixture: mix kefir (or yogurt), sugar and eggs until the sugar is completely dissolved.
  3. Melt the butter and let it cool slightly.
  4. Pour the melted butter into the "wet" mixture.
  5. We prepare the "dry" mixture: sift the flour with salt, soda and baking powder into a separate bowl.
  6. Pour the wet mixture into the dry mixture and stir quickly. The mass must remain non-uniform.
  7. Next, add berries or fruits and mix.
  8. We prepare baking molds: sprinkle silicone molds with water, and if we use metal ones, put paper molds in them or grease them with oil.
  9. We spread the dough to the middle of the molds. In the center we put 1 teaspoon (you can use 1.5 teaspoons) of curd filling. Then lay out the remaining dough. The dough should fill the mold only 3/4 of the height.
  10. Preheat the oven to 180 degrees.
  11. We bake our muffins with cottage cheese and berries at a temperature of 180 degrees for about 25 minutes, until golden brown.
  12. Let cool completely and only then remove the muffins from the molds.
