Almost "mother's" soup, which is suitable for a healthy diet. Minimum fat, maximum protein and healthy fiber.   1. For the broth, pour the carrots and onions cut into strips with water (1.8 liters) and simmer for about 35-40 minutes. Remove from the stove, let it brew.
  2. Pour rice into boiling salted water. Cook until tender, stirring occasionally.
  3. Skip chicken fillet without skin through a meat grinder. Separate the egg white from the egg yolk and add it to the minced meat, salt, beat well.
  4. Separate a 20-25 g piece from the minced meat, roll it into a ball. Cook all other meatballs in the same way.
  5. Boil the meatballs in boiling water for about 10 minutes. Then transfer with a slotted spoon to a quietly boiling vegetable broth, add (if you dare) a spoonful of olive oil and cook the meatballs. Add brown rice to the soup a minute before the meatballs are ready. Sprinkle with fresh chopped herbs and remove the soup from the stove.
