  1. Carefully separate the egg white from the yolk.
  2. Grate the cheese on a fine or medium grater.
  3. Combine egg white and milk in a separate container. Add salt and ground black pepper. Shake with a fork or whisk.
  4. Add starch. Stir well to dissolve the starch completely.
  5. Preheat a skillet over medium-high heat and brush with vegetable oil. Pour the protein-milk mixture into the skillet and spread it over the bottom in a thin, even layer.
  6. Fry the protein pancake for 30-60 seconds for the mixture to set and brown around the edges.
  7. Then tuck the edges of the protein pancake slightly to form a square or diamond with a space in the center.
  8. Fill the space in the center of the pancake with grated cheese. Place the egg yolk on top of the cheese.
  9. Reduce heat to low and cook for about 1 to 2 minutes more, until cheese is melted and yolk is cooked to the desired degree. Lightly salt the yolk if desired.
