  1. One and a half kilograms of eggplant wash, peel and cut into strips.
  2. Pour 1 liter of water into a saucepan, bring to a boil, salt with 1 teaspoon of salt. We lay the prepared eggplants, cover with a lid. Do not worry that there is not enough liquid - the eggplant will let the juice go! Bring to a boil and turn off.
  3. We throw the eggplants into a colander, let the liquid drain, transfer to a bowl and cool.
  4. Let's prepare the sauce. In a bowl, pour 3 tablespoons of liquid soy sauce, 2.5 tablespoons of rice vinegar, add 2 teaspoons of sugar, 1 teaspoon of salt, mix. Add 2 tablespoons of sweet chili sauce, 3 minced garlic cloves, 1 tablespoon of sesame oil, 4 tablespoons of peanut or other vegetable oil. Mix well - the sauce is ready.
  5. Add half a bunch of chopped cilantro to the cooled eggplants.
  6. There we also send three onions chopped into thin rings or half rings.
  7. Add one crushed hot pepper.
  8. Pour the prepared sauce over the eggplants, mix well.
  9. Let it brew in the refrigerator for 2-3 hours and serve a very tasty and spicy eggplant salad to the table.
