Eggplant kebab is a dish of Turkish cuisine, which is ideally prepared from lamb, on the grill. My eggplant kebab is minced pork, and I cooked it in the most ordinary oven. Eggplant kebab according to this recipe turns out to be no less tasty than at the stake, just as ruddy and juicy.

  1. Wash the eggplant, dry it and cut into slices, about 1.5 cm thick.
  2. We put all the resulting circles in a cup. Then we mix the refined oil with soy sauce and half of the granulated garlic and pour into a bowl with eggplant. Stir until each circle is covered with buttery sauce, and set aside.
  3. Onion, sweet pepper and greens chop with a knife as finely as possible.
  4. Add all these chopped ingredients to the minced meat, season to taste with salt and pepper mixture, the remaining granulated garlic and knead well.
  5. With wet hands, form small balls from the resulting minced meat. In size, they should approximately correspond to the diameter of eggplant circles.
  6. We take wooden skewers and string eggplants and meat balls alternately. Place the resulting skewers on a baking sheet covered with baking parchment and bake at 180 degrees for about 45-50 minutes.
  7. Both meat and eggplant should brown appetizingly. Serve the eggplant kebab hot. Greens and fresh vegetables will be a great addition to this unusual but very tasty kebab.
