Eggplant stewed with minced meat and rice

Eggplant stewed with minced meat and rice

Ingredients

Directions

  1. Boil rice.
  2. Cut the eggplants into cubes and fry in olive oil.
  3. Fry the minced meat in another pan, add chopped tomatoes and peppers to it, salt and pepper to taste.
  4. Transfer the minced meat with vegetables to a saucepan, add the fried eggplants and boiled rice there.
  5. Add chopped herbs and squeeze out the garlic.
  6. Cover the pan with a lid and simmer over low heat for about 10 minutes. If necessary, if it burns, add a little water or broth.
  7. Serve with sour cream.
