Eggplant zrazy with rice

  1. Boil the rice in 500 ml of lightly salted water, covered over low heat, until soft. If liquid remains, drain. Preheat oven to 180 C. Line a baking sheet with baking paper or oil 12 muffin tins.
  2. Mix the rice with the Balkan eggplant caviar, add enough breadcrumbs to make a dense mass.
  3. Lubricate your hands with vegetable oil and form small oval patties - zrazy. Place on a baking sheet or place in muffin tins. Lubricate the surface with vegetable oil.
  4. Bake zrazy for 20 minutes, until golden brown. Cool on a wire rack for 10 minutes and serve with green salad dressed with vegetable oil.
