A classic gourmet dish, Eggs Benedict are popular in America and are renowned throughout the world. This international dish was invented by a Frenchman in New York City using English ingredients such as spinach, leek and bacon.

  1. Cut off a small part (top) from a piece of baguette.
  2. Cut the leeks in half lengthwise and then cut into half rings.
  3. Heat the olive oil (or a mixture of olive and butter) in a frying pan. Fry the onions, stirring occasionally.
  4. Add spinach leaves, salt and pepper.
  5. Fry, stirring occasionally, until the spinach softens.
  6. Fry the strips of bacon separately.
  7. In the same pan where the bacon was fried, in the remaining fat, fry the bread on both sides.
  8. Put spinach with onions, bacon and a ready-made poached egg on toasted bread.
  9. Pour the hollandaise sauce on top.
  10. Eggs Benedict can be served. Bon Appetit!
