Fish with vegetables in an envelope

  1. Prepare the marinade. Chop the parsley and cilantro finely. Peel and chop the garlic. Remove seeds from chili peppers, chop very finely. Grate the tomatoes.
  2. Mix the tomato puree, garlic, herbs and chili, add salt and black pepper, pour in 2 tbsp. l. olive oil and stir well.
  3. Place the cod fillet on a large plate, drizzle with half of the marinade and let sit for 30 minutes.
  4. Prepare your vegetables. Remove seeds and partitions from bell peppers, cut the pepper lengthwise into strips 1–1.5 cm wide. Cut the zucchini lengthwise into 1.5 cm wide slices.
  5. Preheat oven to 200 ° C. On a baking sheet, place a 70 cm long double sheet of parchment. In the center of the parchment, alternate between sweet peppers and zucchini. Season vegetables with a little salt and pour over the remaining marinade. Place the cod fillets on top of the vegetables.
  6. Lift the long edges of the paper over the fish, join them and wrap them up.
  7. Twist the open ends of the "envelope" like a candy wrapper. Fold the curled ends under the fish and place on a baking sheet. Place the baking sheet in the oven and bake for 25 minutes.
  8. Remove the baking sheet from the oven and let sit for 5 minutes. Then carefully unfold the envelope, transfer the fish and vegetables to plates and sprinkle with parsley leaves.
