Fried cauliflower with sausages and eggs

Fried cauliflower with sausages and eggs is a quick option for a hearty dinner or lunch. Boil cabbage until half cooked, and then fry with onions, sausages and eggs. Simple and delicious!

  1. We wash the cauliflower and divide into small inflorescences.
  2. Put the cauliflower in boiling salted water (800 ml) and boil for about 5 minutes. The cabbage should be slightly crispy.
  3. After the indicated time, we immediately throw the cabbage into a colander so that the water is glass.
  4. While the cabbage is boiling, peel the sausages and cut into medium pieces.
  5. Peel the onions, rinse and cut into thin feathers.
  6. In a frying pan preheated with vegetable oil, fry the onions for 3-4 minutes, until soft.
  7. Put the cauliflower to the onion.
  8. Fry everything together for about 5 minutes, until the cabbage is browned.
  9. Put sausages with vegetables.
  10. Fry for about 3 more minutes, until the sausages are browned.
  11. Drive the eggs into a bowl, add a mixture of peppers and salt.
  12. We mix everything.
  13. Fill the cauliflower with the sausages with the egg mixture.
  14. Reduce the heat and on low heat, stirring constantly, fry the contents of the pan for about 2 minutes, until the eggs set.
  15. Put the fried cauliflower with sausages and eggs on plates. Decorate with parsley leaves on top and serve. If you wish, you can finely chop the parsley and sprinkle on the dish.
