Fried Eggplant Salad with Onions and Spinach

Fried eggplant salad with onions and spinach turns out to be hearty, juicy and very fragrant. Fried eggplant slices are in perfect harmony with fresh herbs. This dish can be served warm or as a cold snack.

  1. Break the egg into a deep bowl. Add salt, pepper and turmeric. We mix.
  2. Cut eggplant into small cubes.
  3. We put the eggplant in the egg mass, mix and leave for 15 minutes.
  4. Peel the onion and cut into half rings.
  5. Heat up a frying pan with 1 tbsp. tablespoon of vegetable oil, spread the onion and fry it until transparent, about 5-7 minutes. Then transfer the fried onions to another bowl.
  6. Pour the remaining vegetable oil into the pan, heat it up and spread the eggplants with a slotted spoon. Leave the egg mixture in the bowl.
  7. Fry the eggplant over low heat until tender, about 7-10 minutes.
  8. Pour the remaining egg mixture into the eggplant and mix quickly. We fry 1 minute.
  9. Wash spinach leaves and cut.
  10. Put the fried eggplant, onion and spinach in a bowl.
  11. Add mayonnaise.
  12. Stir and add as desired. Let the salad brew for 15 minutes.
