Fried eggs in potato baskets (in the oven)

If you have a little more time in the morning than usual, surprise your family with such an unusual breakfast of potatoes and eggs. Boil the potatoes, grate them, put them in tins in the form of baskets, into which we drive eggs, and bake all this in the oven. You won't have to call anyone to the table, the spectacular look of scrambled eggs in potato baskets will do it for you!

  1. We prepare products.
  2. We choose medium-sized eggs, preferably the third category.
  3. We wash the potatoes thoroughly.
  4. We turn on the oven to heat up to 200 degrees.
  5. Pour the potato tubers in a saucepan with cold water, add salt, put on high heat and bring the water to a boil. Reduce heat to low and cook the potatoes until they are almost cooked through (about 20 minutes). The potatoes should not be boiled, otherwise it will be difficult to grate them.
  6. After cooking, remove the potatoes from the broth and cool completely.
  7. Peel the cooled potatoes and rub them on a coarse grater.
  8. Preparing the cake pan - grease with vegetable or butter.
  9. We spread 3-4 tbsp in each cell. tablespoons of grated potatoes and form baskets with your fingers. If you want the potatoes to be crisper after baking, you do not need to tamp them too much, you can simply make hollows for eggs in the potato mass.
  10. Sprinkle with salt and pepper to taste.
  11. The mold can be sent to the oven at this stage and the baskets can be baked for about 15 minutes so that the potatoes are well browned. But if you do not have time or you like mashed potatoes more than well-fried potatoes, then go directly to the next step.
  12. Drive one egg into the potato baskets.
  13. If you have large eggs, after breaking, separate the whites into a separate container, and put the yolks in baskets. Then add the required amount of egg white. If a large egg is immediately driven into potato baskets whole, then the protein will come out of the cells.
  14. Cooking scrambled eggs in potato baskets in the oven at 200 degrees until the desired degree of yolk readiness (5-7 minutes - if you like liquid yolk, 10-12 minutes - until the yolks fully set).
  15. After baking, let the dish cool slightly in the form, and then remove it on a plate.
  16. Serve scrambled eggs in potato baskets with fresh vegetables, herbs and bread fresh or dried in a pan or toaster.
  17. Such a sunny breakfast cheers you up and perfectly satiates you.
