Unusual fried eggs in sour cream is a simple and very tasty dish of Kabardino-Balkarian cuisine for breakfast. The eggs are stewed in sour cream, which is why they acquire an amazingly delicate taste with creamy notes.

  1. We prepare all the necessary products. For such scrambled eggs, only thick sour cream with a high percentage of fat (preferably homemade) is suitable. Such sour cream, unlike the store one, does not exfoliate when heated.
  2. Put the sour cream in a slightly preheated frying pan and, stirring constantly, heat for 2-3 minutes, until the sour cream becomes tender and acquires a more liquid consistency.
  3. If the sour cream is still too thick, then add about 1-2 tbsp. tablespoons of water, mix and continue to warm up for a couple of minutes. I did not add water, because the sour cream after heating turned out to be liquid anyway. As soon as the first bubbles appear, pour semolina in a thin stream.
  4. Mix well so that there are no lumps.
  5. Then we reduce the heat and carefully (trying not to damage the yolks) introduce the eggs.
  6. Salt and pepper.
  7. Cover the eggs with a lid and cook over low heat until the yolks are slightly covered with a white film.
  8. Unusual fried eggs in sour cream are ready. If desired, sprinkle the eggs with chopped herbs and serve with fresh bread. Such scrambled eggs are most delicious when hot.
