Fried eggs in zucchini, with chicken and tomato

Scrambled eggs in zucchini, with chicken and tomato, perfect for a weekend breakfast. Preparing such a breakfast is a little more complicated than the usual scrambled eggs, but the whole family will be delighted if they are waiting for such a delicious awakening. Make your family happy!

  1. Prepare all required ingredients.
  2. Instead of zucchini, you can take regular zucchini.
  3. I boiled chicken fillet in salted water until tender (20 minutes after boiling). Instead of chicken meat, you can take sausage / ham / sausages.
  4. Preheat the oven to 180 degrees.
  5. Cut the zucchini in half lengthwise. Using a knife and a teaspoon, get the pulp with seeds, being careful not to damage the walls of the zucchini.
  6. Grease a baking sheet with 10 g of butter. Place the zucchini on a baking sheet and place in the preheated oven for 10 minutes.
  7. Cut the zucchini pulp and boiled chicken into cubes.
  8. Melt the remaining butter in a frying pan and fry the zucchini for 3-5 minutes, until cooked through.
  9. Add chicken to the fried zucchini.
  10. Mix. Add mayonnaise and paprika. Salt if desired. I didn’t salt, as I cooked the meat in salted water.
  11. Stir again and turn off the heat. The meat filling for the zucchini is ready.
  12. Place the filling on a plate.
  13. Meanwhile, the zucchini are baked, soft, but keep their shape well.
  14. Stuff 1/2 part of the zucchini boats with the cooked meat filling. I still have half of the filling.
  15. Carefully break the eggs, being careful not to damage the yolk, and pour into the zucchini "boats" one at a time.
  16. Cut off two tomato slices and place on top of the meat filling. Sprinkle the egg and tomato with dried oregano and salt to taste.
  17. Send the zucchini with egg, chicken and tomato to the oven and bake at 200 degrees for 5-7 minutes, so that the protein is completely set and the yolk remains liquid.
  18. Garnish with scrambled eggs in zucchini, chicken and tomato, fresh parsley and serve immediately with toasted toast.
