Fried eggs with zucchini, tomatoes and herbs

A great start to the day - scrambled eggs with vegetables and herbs! A nutritious and delicious breakfast is prepared quickly, simply and in the season of vegetables it will cost a family budget very inexpensively. Juicy tomatoes and zucchini give the usual fried eggs a new, original taste. Try it - it's delicious!

  1. Prepare foods according to the list. From the indicated amount, I got a large hearty breakfast for three (at the rate of 2 eggs per person).
  2. Rinse and dry vegetables and herbs. Cut off the ends of the zucchini, remove the stalks from the tomatoes.
  3. Cut the courgettes into slices about 1 cm thick, salt and leave for 3 minutes to let the liquid stand out. The released juice is not needed.
  4. Pour flour into a plate suitable for breading. Dip the zucchini circles in flour on all sides.
  5. Heat the oil in a heavy-bottomed skillet. Place the zucchini in a skillet and grill over medium heat for about 3-5 minutes, until golden brown.
  6. While the zucchini is roasting, cut the tomatoes into wedges.
  7. Flip zucchini to the other side and reduce heat to low.
  8. Put the tomato slices on the zucchini, lightly salt.
  9. Chop green onions and dill.
  10. Add half of the chopped greens to the pan, spreading it evenly over the vegetables, and pepper.
  11. Gently beat the eggs into the skillet, taking care to keep the yolks intact. Season the eggs with salt, cover the skillet with a lid, and cook over low heat for about 6-10 minutes.
  12. Once the whites are cooked and the yolks are semi-liquid, the eggs are ready.
  13. Remove the skillet from the heat and sprinkle the remaining herbs on the scrambled eggs, courgettes and tomatoes.
  14. Divide the scrambled eggs into bowls. It is easily separated with a wooden spatula into portioned pieces.
  15. Delicious, nutritious, but not too high-calorie breakfast - such bright scrambled eggs will brighten your morning!
