Even those children who categorically refuse to eat fish settle for fish sticks. In order not to feed them with store-bought convenience foods, prepare the sticks yourself.   1. Trim very thin edges off the fillets. Cut the fillets in half lengthwise and then into equal strips 2.5 cm thick.
  2. Pour flour into one deep bowl, season with salt and pepper. Pour breadcrumbs into the other. Break the eggs into a third bowl and beat until smooth with a pinch of salt.
  3. Line a baking sheet with foil. Dip fillets in flour, shake off excess.
  4. Dip in an egg and then in bread crumbs. Prepare all the sticks in this way, placing them at a short distance from each other.
  5. Cover the fish fingers with foil and refrigerate for at least 30 minutes. Heat the oil in a wide skillet. Place the sticks at a distance from each other and fry for 2-3 minutes. Turn gently and cook for 2 more minutes. Transfer to paper towels to remove excess oil.
