Fried potatoes with bacon, mushrooms and eggs

Flavored crispy fried potatoes, bacon, mushrooms and eggs to boot. Bacon, mushrooms and eggs give regular fried potatoes a satiety, special taste and appetizing appearance.

  1. Cut the bacon into thin slices.
  2. Put the bacon slices in a dry frying pan and fry over medium heat until crisp, 5-8 minutes.
  3. Wipe the champignons with a damp kitchen towel and cut into slices.
  4. Transfer the finished bacon to a separate plate.
  5. Put the champignons in a pan with the fat remaining after frying the bacon and fry until light brown, 7-10 minutes.
  6. Peel the potatoes, rinse and cut into cubes.
  7. Then put the fried mushrooms on a plate to the bacon.
  8. If there is still mushroom liquid in the pan, wipe it off with a paper kitchen towel.
  9. Pour vegetable oil into the freed pan and heat it up. We spread the potatoes there.
  10. Fry the potatoes over medium heat, stirring occasionally, for 15 minutes, almost until tender (frying time depends on the type of potato). While frying, you can cover the pan with potatoes with a lid.
  11. Peel the onions and cut into feathers.
  12. Chop the green onion into small pieces.
  13. After a while, add onion, salt (0.5 tsp) and ground pepper (pinch) to the pan with potatoes.
  14. Mix and fry everything together for 5 minutes.
  15. Add fried mushrooms and bacon. We mix.
  16. Beat the eggs lightly with a fork or whisk, add salt and pepper (pinch at a time).
  17. Pour the egg mixture into the pan on top of the potatoes and, without stirring, distribute evenly over the entire surface. Cook over low heat for 5-7 minutes, until the eggs are cooked.
  18. Fried potatoes with bacon, mushrooms and eggs are ready.
  19. Transfer to a plate, sprinkle with green onions and serve.
