Fried potatoes with green beans and eggs

A tasty and nutritious dish can be without meat. Aromatic, lightly crispy fried potatoes with soft, juicy green beans and eggs are perfect proof of this. Cooking fried potatoes with green beans and eggs will take about half an hour.

  1. Prepare all ingredients.
  2. Rinse the green beans, cut off the ends and cut into several pieces. If you are using frozen beans, you do not need to defrost them beforehand.
  3. Peel the potatoes, rinse and cut into small cubes (about 1 cm on a side).
  4. Heat olive oil in a deep skillet and add potatoes. Fry over medium heat, stirring occasionally, for 10-15 minutes, until the potatoes are almost ready (cooking time depends on the type of potato).
  5. While the potatoes are fried, boil the green beans. To do this, dip the beans in boiling water (700 ml) and cook after boiling again for about 3 minutes.
  6. Place the beans in a colander and rinse with cold water to stop the cooking process. So the beans will retain their dense consistency and bright green color in the finished dish.
  7. The potatoes are browned on all sides and softened.
  8. Add boiled green beans, hot red peppers and paprika to the pan and stir. You can add other spices to your liking.
  9. Grate the garlic on a fine grater (or pass through a press) and add to the pan. Season with salt (0.5 tsp), pepper and stir the contents of the pan.
  10. Drive the eggs one at a time into the skillet. Season the eggs with a little salt.
  11. Cover the skillet with a lid and cook for another 3 minutes until the clear egg white turns white. The yolks can be kept intact, I like to pierce them so that they then spread over the potatoes. But you can also mix eggs with potatoes and beans.
  12. Fried potatoes with green beans and eggs are ready.
  13. Arrange the potatoes with eggs and beans on plates, garnish with fresh herbs if desired and serve until cool.
  14. Juicy, soft, aromatic, slightly spicy potatoes - very tasty!
