  1. Prepare the required ingredients.
  2. Rinse and dry the zucchini. It is better to choose a medium zucchini - with a diameter of about 7-8 cm
  3. Cut 6 slices about 1 cm thick from the zucchini.
  4. Using a glass, cut out the middle from the zucchini circles.
  5. Heat the sunflower oil in a skillet and add the courgette rings.
  6. Fry the rings over high heat for 3 minutes until golden brown, then turn over.
  7. Immediately drive one quail egg into each ring, but do this carefully so as not to damage the yolks.
  8. Sprinkle eggs with salt and black pepper.
  9. Cover the skillet with a lid and cook the eggs in the courgette rings over low heat for 1-2 minutes.
  10. Scrambled eggs in courgette rings are ready.
  11. Serve hot scrambled quail eggs in courgette rings.
