Fritatta with smoked sausage and corn

This Italian omelet - frittata - is made with smoked sausage and frozen corn, topped with cheese and cilantro.

Ingredients

  1. Heat a medium-sized frying pan over medium-high heat, brush with oil. Put the chopped sausage in a preheated pan, fry, stirring occasionally, until brown, about 4 minutes.
  2. Pour corn and red ground pepper into a frying pan, stir. Reduce heat to medium-low.
  3. In a small bowl, combine whole egg and whites, beat lightly with a fork.
  4. Pour eggs into skillet, cover and cook for about 8 minutes.
  5. Remove the pan from the stove, sprinkle the omelet with cheese and 1.5 tbsp. tablespoons of cilantro. Cover the pan with a lid and leave for 2-3 minutes. Sprinkle the frittata with the remaining cilantro, cut into portions and serve immediately.
