You can diversify your favorite omelet by making such a wonderful frittata with asparagus and green onions.

Ingredients

Directions

  1. Turn on the oven to preheat to 180 degrees. In a medium bowl, beat eggs, add crushed cheese, milk, salt, 1/2 teaspoon salt and 1/8 teaspoon black pepper.
  2. In a large skillet with a removable or heat-resistant handle, heat the butter over medium-high heat. Pour the asparagus into a preheated pan and sprinkle with 1/4 teaspoon of salt, cook, stirring occasionally, for about 4 minutes. Add green onions to the pan and cook for a couple of minutes. Spread the asparagus and onions evenly over the bottom of the pan.
  3. Reduce heat under skillet to medium-low and pour eggs into skillet. Cook eggs for 4-5 minutes without interfering. Then place the pan in a preheated oven and cook the frittata for 9-10 minutes.
  4. Serve frittata on platters with herbs (optional).
