Frittata with broccoli and tomatoes

Frittata (omelet) is made with eggs, broccoli, tomatoes and cheese.

Ingredients

  1. Switch on the oven with grill function for preheating.
  2. In a bowl, beat all the eggs with 1/4 teaspoon salt and 1/4 teaspoon pepper. Add cheese, stir, set aside.
  3. In a large skillet with a refractory handle, heat the olive oil, add the shallots and broccoli, cook over medium heat, stirring occasionally, for 8-10 minutes.
  4. Pour the eggs over the contents of the pan and fry the frittata for a couple of minutes. Then pry the sides of the omelet with a spatula so that the liquid mass flows under the toasted crust, fry for another couple of minutes.
  5. Place the tomato quarters on the omelet and place the frittata pan under the preheated grill for 5 minutes. Then take the frying pan out of the oven, let it cool for 5 minutes and the frittata can be served.
