Fritter cake with cottage cheese and sour cream

Today we are preparing a very simple, but at the same time unusual pancake cake! It turns out very tasty and tender. Perfectly diversifies breakfast or afternoon snack, and can also act as a dessert.

  1. We prepare products for the test. Kefir and eggs should be at room temperature.
  2. Place eggs, sugar, vanilla sugar and salt in a bowl.
  3. Mix everything and add kefir.
  4. Add the sifted flour, preferably in small portions. We mix. You may need a little more or less flour. The consistency of the dough should be like that of sour cream. Add soda and mix well.
  5. We leave the dough for pancakes on kefir to rest for about 20 minutes, so that kefir and soda react.
  6. After the dough rests, bubbles appear on its surface.
  7. Let's start frying pancakes. Pour a little sunflower oil into the pan and spread over the surface with a silicone brush. We spread the pancakes on a preheated pan with a tablespoon and a teaspoon (I collect the dough with a tablespoon, and I help put the dough into the pan with a teaspoon).
  8. Fry the pancakes first on one side under the lid, over medium heat.
  9. Check doneness and flip to the other side with a fork or spatula.
  10. We make a minimum fire and fry the second side also under the lid. Remove the finished pancakes with a spatula.
  11. Before each new serving of fritters, grease the pan with oil. We fry all the pancakes until the dough is over.
  12. We prepare products for the cream.
  13. Mix sour cream, cottage cheese and sugar to taste.
  14. When the pancakes have cooled, proceed to the assembly of the cake.
  15. I use a 20 cm diameter mold without a bottom. We set the form on the dish. Lubricate the bottom (plate) with plenty of cream and lay out a layer of pancakes.
  16. And so we alternate until the cream or place in the form runs out.
  17. Lubricate the pancake cake with liquid honey on top and sprinkle with chopped walnuts.
  18. We give the cake of pancakes with cottage cheese and sour cream to soak well. I collected the cake during the day and left it in the refrigerator overnight - in the morning a delicious breakfast was waiting for us!
  19. After the fritter cake has soaked, remove the form. I sprinkle cinnamon on top of the cake.
