Gazpacho from tomato and watermelon

Ingredients

  1. In a large bowl, combine the tomatoes, watermelon, cucumber, bell peppers, shallots, basil and mint. Sprinkle with 1.5 tsp. salt and pepper to taste. Stir in olive oil and vinegar.
  2. Grind the tomato mixture in a blender, if necessary in portions. Strain the soup through a sieve with fine holes, kneading the pulp with a spoon; discard the cake and add salt to taste. Cover and chill for 1 hour.
  3. When serving, sprinkle the soup with herbs and sprinkle with olive oil.
