Gazpacho Tomato Soup

Ingredients

  1. Core the tomatoes and put them in boiling water for about 10 seconds to help peel off the skin. Place the tomatoes in ice water to cool, then peel them off. Cut the tomatoes in half across and squeeze the pitted juice into a sieve over the bowl. Leave the juice and discard the seeds. Purée half the tomatoes with a food processor or blender. Coarsely chop the remaining tomatoes.
  2. In a bowl, combine the chopped and puréed tomatoes and add the remaining juice. Add cucumbers, avocados, red onions, bell peppers, oil, vinegar, garlic, and jalapenos. Season with salt and pepper to taste. Refrigerate for at least an hour before serving. Pour gazpacho into 6 serving bowls. Garnish with fresh herbs as desired.
