Ginger fried rice

  1. Boil the rice in advance and let it cool.
  2. Peel the ginger and grate, retaining all the juice.
  3. Beat eggs a little.
  4. Heat the wok over medium heat, put the ginger there and fry until the mass is dry and the juice evaporates.
  5. Pour in the sesame oil. It will boil and bubble as you continue to stir. If you feel like you won't be able to work quickly in the wok, turn down the heat.
  6. Put the rice in the wok, stirring constantly.
  7. When the rice is well mixed with the ginger, add the beaten eggs.
  8. Increase heat and cook until rice and egg are evenly mixed and rice is browned.
  9. Season with salt and soy sauce. Fry until the rice stops sticking together.
