  1. Preheat oven to 180 degrees. Grease with oil (this is easy to do with a brush) and flour 6 cupcake tins. Mix flour with baking powder and salt. Separately, combine buttermilk or low-fat yogurt, vanilla, finely grated lemon zest, and lemon juice.
  2. Beat butter with sugar with a mixer. Add eggs one at a time, beating each time. With the mixer speed reduced, add the flour in three batches, alternating with the lemon mixture.
  3. Put the dough into molds. Bake lemon muffins for 20-25 minutes. Check the readiness of the cupcakes with a toothpick (it should be clean). Cool 10 minutes, then cool the cupcakes completely on a wire rack.
  4. Place the rack of cupcakes on the parchment. Mix powdered sugar with two tablespoons of lemon juice. Pour sugar-lemon frosting over cupcakes. Let the lemon muffins rest for 30 minutes and then serve.
