It's amazing how simple tomatoes, onions, and dill make an ordinary omelette an impressively mouth-watering dish.

Ingredients

Directions

  1. Separate the whites from the yolks of 4 eggs (for the omelet you need 4 whites, and use 4 yolks for cooking other dishes).
  2. Dip the tomato in boiling water for half a minute, cool under cold water and peel it.
  3. Cut the tomato, peel it and cut the flesh into cubes.
  4. Chop the onion finely.
  5. In a nonstick skillet, heat oil over medium heat.
  6. Sauté the chopped onion for 2 minutes (stir once or twice).
  7. Add the tomato to the skillet with onions. Cook for 1 minute.
  8. Meanwhile, whisk 4 whole eggs and 4 egg whites together (add 2 tablespoons of water).
  9. Place the vegetables from the skillet in a deep plate.
  10. Pour the beaten eggs into the same skillet and cook the omelet over moderate heat, stirring frequently, until the omelet is almost completely set.
  11. Drain the tomato and onion bowl and gently toss the vegetables and eggs.
  12. Add chopped dill (1 tablespoon or to taste) and season with salt and pepper. The omelet is ready.
  13. If, instead of bread and butter, such an omelet is served with toast, greased with ripe avocado, a gourmet breakfast will bring even more pleasure and good mood.
