Homemade limoncello with grapefruit

Tincture for those who do not like frankly sweet drinks

  1. 1. Grate the grapefruit zest on a fine grater, avoiding white cotton wool.
  2. 2. Put the zest in a suitable container, add vodka, cover and leave in a dark place at room temperature for a week.
  3. 3. Then uncork, add the vanilla pod, previously peeled from grains, and leave for 2 more days, shaking daily.
  4. 4. Strain the tincture through a sieve, put the remaining zest in a saucepan and add sugar and water.
  5. 5. Heat until the sugar is completely dissolved, remove from the stove and cool.
  6. 6. Mix the resulting syrup with tincture and lemon juice. Leave for 1 day.
  7. 7. Then pour milk into the tincture. After about 2 hours, when the milk is curdled, strain the tincture through paper filter bags.
  8. 8. Pour the finished limoncello into bottles, seal and serve chilled.
