Homemade tomato juice is a great way to preserve a rich harvest and a delicious and healthy drink for all seven

  1. Wash the tomatoes, make a cruciform incision on each. Dip the tomatoes in boiling water for a minute, then remove and peel them.
  2. Cut the tomatoes into cubes, removing the seeds.
  3. Wash the celery and chop together with the leaves.
  4. Peel and chop the onion.
  5. Place all ingredients in a large stainless steel pot. Bring to a boil and cook for about 25 minutes, until lightly thickened.
  6. Strain the mixture through a sieve and chop in a food processor.
  7. Cool completely.
  8. Cover the juice and refrigerate. There it can be stored for 1 week.
