Hot sandwiches with omelet and sausage

Hot omelette sandwiches are quick and easy to prepare in one pan. First, an omelet with onions and sausage is fried, then the omelet is prepared with the top of the baguette, then the bottom of the baguette is fried and a sandwich is formed.

  1. Peel the sausage and cut into small cubes.
  2. Peel the onions and also cut them into small cubes. Decide in which pan you will cook the dish, and depending on its size, cut the baguette into 2 or 4 pieces. Cut each piece of baguette in half lengthwise.
  3. Break the eggs into a bowl. Season with salt and pepper to taste. Whisk the mixture with a fork for a few seconds until smooth.
  4. Stir the onion and sausage into the egg mixture.
  5. Heat a skillet over medium heat and brush with vegetable oil. Pour the omelet mixture into the skillet and spread evenly. If the pan fits 2 out of 4 slices of bread, pour half of the omelet mixture.
  6. Saute the omelette mixture for 30-40 seconds, until it sets slightly. Then use a spatula to cut the omelet in half and place the top halves of the baguette on top of it. Use a spatula to tuck the omelette so that it just extends slightly outside the baguette slices and fry for another 30 seconds.
  7. Transfer the scrambled baguette halves to a plate for a while.
  8. Place the bottom halves of the baguette slices in the skillet. Heat the bread in a skillet for about 1 minute.
  9. Then cover the bottom of the baguette with the top. Reduce heat to low, cover skillet with lid and heat sandwiches for about 1 minute more.
  10. If you have shared
  11. baguette and omelet mixture in half, repeat the process by toasting the remaining pieces of bread and omelet mixture.
  12. Hot omelette and sausage sandwiches are ready! Place the sandwiches on a plate, garnish with lettuce if desired and serve.
