Creme brulee ice cream is one of the most popular types of ice cream. It has a caramel self-sufficient taste, so it does not need toppings and other additions. Many people wonder why ice cream is called creme brulee. It's simple - the composition and taste of caramel ice cream is similar to the world-famous creme brulee dessert.

Ingredients

Directions

  1. First, prepare the caramel. Pour 100 g of sugar into a small saucepan, and add 2-3 tbsp. water and put on low heat. We are waiting for the sugar to start dissolving. You do not need to stir the caramel at this stage, otherwise, the sugar will stick to the spoon. Just tilt the pan slightly to the side so that the sugar sinks more evenly and faster. Watch out for the fire - sugar is very easy to burn, which will give an unpleasant bitterness.
  2. When the sugar turns amber, carefully add 100 ml of cream. Caramel will immediately jump into the lump - and it should be. To bring it to homogeneity, continue to heat, stirring constantly until the caramel turns into a smooth mass. Then remove from heat.
  3. Mix powdered milk with a tablespoon of starch (take with a slide). Then pour in the milk. Stir well to break up any lumps. Carefully enter the resulting mixture into the hot caramel blank.
  4. Put the pan with the mixture back on the fire and heat until it becomes homogeneous and slightly thickened. Remove from the heat, and pour into a bowl. Cover with cling film so that the crust does not form, and cool at room temperature.
  5. Add 30 g of sugar to the yolks and beat them to a lush light mass.
  6. Add the beaten egg yolks to the cooled caramel mixture and mix until smooth.
  7. Pre-cool the cream - so they get better. We also recommend using chilled beating utensils. Using a mixer at high speed, beat the cream into a lush dense mass. And gently stir into the caramel.
  8. Next, choose one of the most convenient ways for you to make ice cream creme brulee:
  9. Pour the workpiece into a tray and freeze. Stir every 30 minutes until hardened. This is necessary so that the creme brulee ice cream was more creamy and not solidified by a single ice lump. The ice cream will be ready in about 5-6 hours.
  10. Pour the workpiece into special forms for ice cream and send it to freeze. In this case, mixing is not required.
  11. As you can see, making creme brulee ice cream with your own hands is easy. The main thing is to choose high-quality and fresh ingredients for cooking. And yet - cook more, because this ice cream is eaten very quickly. Bon appetit!
