  3. Mix powdered milk with a tablespoon of starch (take with a slide). Then pour in the milk. Stir well to break up any lumps. Carefully enter the resulting mixture into the hot caramel blank.
  4. Put the pan with the mixture back on the fire and heat until it becomes homogeneous and slightly thickened. Remove from the heat, and pour into a bowl. Cover with cling film so that the crust does not form, and cool at room temperature.
  5. Add 30 g of sugar to the yolks and beat them to a lush light mass.
  6. Add the beaten egg yolks to the cooled caramel mixture and mix until smooth.
