  1. Bring the milk to a boil and remove it from the heat.
  2. In a small saucepan pour 160 g of sugar and melt over low heat until smooth and golden brown. Add salt to taste - optimally ⅓ tsp.
  3. Add hot milk. Stir the mass until smooth and remove from heat. Allow to cool to 60 ° C - measure the temperature with a kitchen thermometer.
  4. Beat eggs with 40 g of sugar. Add the eggs to the warm milk mixture. Put on low heat and, stirring constantly, bring the mass to a temperature of 80 ° C.
  5. Cool the mixture to room temperature at room temperature. Then mix the preform with the cream and mix thoroughly until smooth.
  6. Pour into an automatic ice cream maker or a tray with a lid. Put to freeze.
  7. For the first 2 hours of freezing, stir the contents with a spoon every 20 minutes. This will prevent the formation of large ice crystals and will make the consistency creamy.
  8. When it becomes difficult to mix - put the tray in the freezer until completely frozen (about 6 hours).
  9. Serve ready-made ice cream with salted caramel with topping, chocolate sauce, chopped nuts or other additives to taste.
