The Imeretian omelet differs from the classic omelet in one important ingredient - chopped walnuts are added to the omelet mixture. Due to this, the omelet acquires a distinct nutty taste and aroma, as well as a darker color. Be sure to try this unusual omelet!

  1. Transfer the walnut kernels to a blender and grind into tiny crumbs. Instead of a blender, any other kitchen chopper, rolling pin or meat grinder will do.
  2. Transfer the nut crumbs to a bowl.
  3. Drive eggs in here.
  4. Pour in cold water, add salt and black pepper.
  5. Whisk the combined ingredients with a fork until smooth and light foam.
  6. Heat some sunflower oil in a skillet. Pour the egg and nut mixture into the skillet. Cover the skillet with a lid and cook the omelet for 5 minutes over low heat.
  7. Then turn the omelet over to the other side and cook for about 3 more minutes.
  8. Cut the finished omelet into 4 parts with a spatula right in the pan.
  9. Transfer the walnuts omelet to a plate and serve immediately.
