My childhood was spent in Kazakhstan on the Caspian Sea. We often went to the seashore with an overnight stay and the adults cooked beshbarmak or shurpa. I didn't eat it then, but I well remember the delight the men were in.

  1. Cook the meat in a cauldron for 2 hours, removing the foam.
  2. Cut the carrots into cubes, add to the cauldron. Coarsely chop the potatoes. Add potatoes and cook for 20 minutes. Add spices. Add tomatoes, onions.
  3. Cook until tender over low heat. Add greens. Bon Appetit!
